JOB OVERVIEW

The Head Brewer would coordinate all brewing and packaging operations from receiving of raw materials, production and delivery of finished product to the consumer. The Head Brewer will report to the Production Manager / Managing Director.

DUTIES AND RESPONSIBILITES

  1. Coordinating and managing all brewing, cellar, filtering, packaging operations and staff Checking temperatures, quality of samples and performing basic laboratory tests ensuring that the recipes are followed correctly producing a consistent quality product
  2. The running of the plant and machinery ensuring consistent quality of the product
  3. Assisting the Production Manager in writing and developing new recipes or modifying existing recipes in order to improve the quality of the beers, respond to market demands, introducing specials and new creations to attract and keep the customers interested
  4. Establishes, monitors and ensures brewing costs stay within limits set by the directors
  5. Budgeting, financial planning and participating in business development
  6. Sourcing, auditing and assessing existing and new suppliers, preparing purchase orders, monitoring quality of ingredients from suppliers, monitoring quality of incoming goods
  7. Ensures that the brewery operates efficiently and profitably while maintaining their reputation and ethos
  8. Must coordinate a variety of activities and is responsible for business performance of the brewery and meeting sales and quality targets set by the directors
  9. Responsible for drafting and implementing all operating procedures (according to HACCP and ISO international standards) related to the proper functioning of the brewery
  10. Investigates and resolves beer quality complaints
  11. Assists in recruiting, motivating, hiring and terminating staff for the brewery
  12. Planning, controlling and scheduling resources and staff in order to meet objectives
  13. Maintains a safe and sanitary work environment, for all employees by drafting and implementing strict hygiene procedures based on HACCP (Hazard Analysis of Critical Control Points) guidelines
  14. Specific duties involving brewing are the establishment of quality standards, training of employees in brewing methods, cleaning in place, hygiene, tasting, budgeting, inventory management and waste management.
  15. Regular inventory management of all raw materials, chemicals, wort, bright beer, finished product, equipment and accessories (i.e. Hoses, clamps, kegs, filter pads etc.)
  16. Assumes all duties given by the Production Manager & Managing Director
  17. Comply with company rules and regulation and provision contained in the Employment Handbook.
  18. Comply with time and attendance policies set by the company.
  19. Ensure all security incidents, accidents and near misses are always logged in a timely manner and brought to the attention of the line manager and Managing Directors.
  20. Comply with company grooming standards at all times to portray a professional image of self and the company.
  21. Leading Brewery team by attracting, recruiting, training and appraising talented personnel.
  22. Supervise all maintenance operations for the company in all departments
  23. Coordinate driver beer deliveries, purchases and general errands with other departments

Desired Skills & Qualifications

  1. A degree/diploma in chemical/electrical/mechanical/food engineering or Food Science/Technology from a reputable university
  2. Minimum of 5 years working experience in a brewery
  3. Minimum of 2 year working experience as a Head Brewer
  4. Knowledge of brewery costing, labor costing, recipe formulation, inventory management
  5. A sensitive palate with a well-developed sense of taste and smell and the ability to identify of flavors in beer
  6. Ability to follow recipes and solve problems without compromising the quality of the final product
  7. Good personal hygiene (knowledge of HACCP principles is a plus)
  8. Ability to manage a team, delegate responsibility, motivate staff, work closely with others and work in a fast paced environment
  9. Ability to effectively problem solve
  10. Have passion for their profession and willingness to dedicate time and effort to satisfy their customers
  11. Must be willing to work during the night shifts, weekends and holidays
  12. Knowledge of quality service standards and applicable laws
  13. Knowledge of Word and Excel, Outlook is required
  14. Should have good knowledge in all areas of the brewery from milling to the brew house, cellar, filtration and kegging.
