We are looking to hire a customer-oriented restaurant supervisor in one of our camps in the Mara. He/ she will ensure that all restaurant operations run smoothly. The suitable candidate will be required to be in contact with clients during their dining experience; therefore, he/she will be expected to be polite, friendly and hospitable when welcoming guests into the dining room and during the service of the meals. He/she will be required to be professional but relaxed, smart and presentable, to be punctual, to anticipate the preparation and serve guests promptly, in order to maintain the exceptional standard of service and quality that is required and coordinate the food service activities in the dining area.

Duties & Responsibilities

  • Manage wait staff’s work schedules (split shifts).
  • Ensure all wait staff maintain high standards of personal grooming & hygiene.
  • Ensure cleanliness and proper set up of the restaurant.
  • Ensure coordinated service for all courses between kitchen and restaurant.
  • Report any breakages and maintenance issues to the Camp Manager.
  • Ensure all menus and bar cards are in good state.
  • Ensure the scullery and back area is neat and tidy.
  • Ensure that the service and presentation of food and beverage complies with the required standards
  • Monitor inventory and ensure that all food supplies and restaurant operating equipment are well taken care of and safeguarded.
  • Monitor usage levels of beverages and restaurant issues and ensure the control sheets are properly recorded
  • Ensure stores requisition is done as per the procedure and controls are maintained
  • Ensure regular and accurate stock take is done & figures submitted to the Camp Manager.
  • Review customer survey feedbacks to develop and implement ways to improve customer service experience.
  • Relay comments received from guests to the camp manager
  • Resolve customer complaints in a professional manner and report immediately to the Camp Manager.
  • Do periodic appraisals in conjunction with the Camp Manager.
  • Liaise with the Camp manager in choosing employee of the month.
  • Any other duties as delegated by your manager.

Qualifications, Skills and Qualities

  • Formal training in food and beverage Service.
  • Knowledgeable in Food & Beverage product and service
  • Friendly, outgoing, well composed, cheerful and enthusiastic demeanor
  • Calm under pressure, Confident and positive attitude
  • Outstanding customer service skills
  • Natural leadership ability
  • Excellent planning and organizational skills
  • Good communication and leadership skills
  • Willingness to work hard and operate in a team structure
  • 5 years’ experience with 2 in a supervisory position in a high end fast paced environment
  • Substantial experience in a busy camp setup will be an added advantage.
  • Food Handlers Certificate
  • Understand and have a working knowledge of all current Health and Safety legislation and Food Hygiene legislation and to be conversant with the rules contained therein.
  • HACCP knowledge will be an added advantage
